A Molten-gold Summer Morning

On a particularly sultry summer day, when the sun beats down early on, start your day with a tall glass of water. To step it up a touch, drop a chunk of jaggery, or gur, in the water..it is not only a treat to the eyes — backlit by the sun on your porch, shimmying its way through the water, caramel-like against the stillness of the glass curve — it is a source of instant energy for your body. When you let it sit there while you get a splash of cold water on your face, it melts quietly, emulsifying the water with its molten gold, humming a blood-sugar-balance song. Squeeze some fresh lime juice in it, stir through and guzzle down with child-like fervor. Get your mojo on.
