Salad Splurge – Lettuce Do The Momo

As all good things must come to an end, thus ends our Salad Splurge with a spicy-licious Asian-style salad with Chicken Momos..

Asian-style Salad with Chicken Momos
(Serves 2-3)

For the Dressing:

2 Tablespoons freshly squeezed tamarind extract
1 Tablespoon soy sauce
1 Tablespoon vinegar
½ Teaspoon hot sauce
2 Tablespoons peanut or sesame oil, warmed and seasoned with a dash of red pepper flakes
1 Teaspoon freshly grated ginger
½ Teaspoon lemon zest
1 Teaspoon roasted white sesame seeds powder
2 Teaspoons roasted peanut powder
½ Teaspoon cumin-coriander powder
½ Teaspoon brown sugar
Salt and pepper according to preference

Whisk all of the above in a bowl and refrigerate for about 30 mins while you prep for the salad.

For the Salad:

12 Chicken momos, wontons or shu mai
A small bunch of Romaine or Iceberg lettuce, chopped
(If using a 8 oz bag of salad greens with carrots and purple cabbage, like Dole, use about 1/2 of it)
¼ Cup Shredded carrots
½ Cup Thinly sliced onions
A handful of croutons or crisp noodles or fried pinwheel rice crisps to top

Steam the chicken momos according to package directions, set aside. In a big bowl, assemble the salad greens and vegetables, add the momos and toss with the dressing. Serve immediately, with a topping of any of the crispies mentioned above.
