Strawberries and raspberries – sweet, tart and mildly spiced – come together in this berry easy crumble, crunchy and bubbly with buttery-nutty goodness..
Red Berry Crumble
(Serves 4)
For the berry filling –
6 Medium-sized strawberries
8-10 Raspberries
1 Tablespoon finely chopped orange rind
The juice of 1/2 an orange
1 Tablespoon all-purpose flour
3-4 Tablespoons sugar (modify according to preference or to offset the tartness of the berries)
A pinch of salt
A dash of chaat masala
Slice the berries and mix with the other ingredients, set aside while you prepare the crumble topping.
For the topping –
1/3 Cup all-purpose flour
4-5 Tablespoons cold, unsalted butter, diced
1/4 Cup light brown sugar
A pinch of salt
2 Tablespoons oats
1-2 Tablespoons chopped walnuts
Mix all of the above, except the walnuts, in the bowl of an electric mixer, fit with a paddle attachment. Mix on low speed until the butter is pea-sized or if mixing by hand, until the mixture is just crumbly.
Divide the berry filling into individual ramekins or a baking dish. Sprinkle the topping evenly on top of the filling, scatter the chopped walnuts over the topping and bake for 30-35 minutes in a 350 degrees F oven. The tops will be browned crisp and the berry juices might bubble over slightly. Serve immediately.
