Mango on the Mind – Mellow-Yellow Mango Dal

Next up in our Mango on the Mind series is a simple Mellow-Yellow Mango Dal.

Mango Dal
(Serves 3-4)

To prime up the dal
1 Cup Masoor dal or orange lentils 

1 1/2-2 Cups of water
A pinch of turmeric
Salt according to taste

Wash and pressure cook the dal with the 1 1/2-2 cups of water, turmeric and salt. If cooking directly in a pot, cook on a low flame until the dal is soft and mushy when whisked up with a fork. Set aside.

For the seasoning –
1 Tablespoon light olive oil
1/2 Teaspoon each of mustard, cumin, fennel seeds
1 Teaspoon grated ginger
3-4 Red chillies (or according to preference)
1/4 Teaspoon turmeric
A dash of asafoetida
1 Medium-sized raw mango, peeled and diced
1-2 Cups of water
Salt according to taste
2-3 Small cubes of jaggery
Finely minced cilantro for the garnish

Heat the oil in a pan and season with the usual suspects – mustard, cumin and fennel, until they splutter. Add the grated ginger and red chillies, fry for a minute, then add the turmeric, asafoetida and mango. Stir for about 3-4 minutes, or until the mangoes start to turn translucent, on a low flame. Mix the seasoning with the cooked dal, water it down, add the salt and jaggery and let boil for 8-10 minutes. Garnish with cilantro and serve with hot rice.

    This is really a refreshing dal for the summer heats, we also made it at home but use toor dal and temper it with mustard seeds, bengali prep.
